Pancakes with Apple-Cinnamon-Filling

These vegan pancakes are sooo incredibly delicious and prepared in no time. They taste even better with the homemade warm apple filling. I used spelt flour and oat milk for the preparation. You can also use another flour and another plant based milk. The recipe is vegan, sugar-free and made for 5 medium pancakes.

Ingredients

  • 200 g spelt flour

  • 200 ml plant based milk

  • 100 ml water

  • 2 tsp. baking powder

  • some coconut oil for frying

  • Apple-Cinnamon-Filling
  • 2 small apples

  • 200 ml plant based milk

  • 2 tsp. cinnamon

  • 1 tsp. peanut butter

  • 2 tbsp. unsweetened apple puree

Directions

  • Cut the apples into small cubes and cook them in the vegetable milk and cinnamon for 20 minutes.
  • In the meantime mix the flour with the baking powder and stir the vegetable milk and water into the flour.
  • Put some coconut oil in a pan and fry the pancakes over medium heat. The pancakes are easy to flip when you see air bubbles on top and no liquid dough is visible anymore.
  • Flavor the apple filling with the peanut butter and applesauce.
  • Enjoy the pancakes with the homemade apple-cinnamon filling !
