Lentil pasta is rich in protein and has a somewhat nutty flavor of its own. This goes perfectly with the roasted walnut, along with peppers, garlic and fresh arugula.

Ingredients

  • 200g lentil noodles

  • 1 red pepper

  • 4 garlic cloves

  • 3 Tbps Walnuts

  • fresh oregano & rosemary

  • 3 tbsp olive oil

  • Salt & some chilli

  • 100g arugula

Directions

  • Cook the lentil noodles al dente according to package directions.
  • Cut the peppers into thin strips, the garlic into fine slices and halve the walnuts.
  • Heat a pan with olive oil and fry the peppers together with the garlic and walnuts. Finely chop the herbs and add them to the pan and season the vegetables with a little salt and chili.
  • Add the pasta to the roasted vegetables and finally add the fresh arugula. Season the pasta with salt and chili.
