Lentil pasta is rich in protein and has a somewhat nutty flavor of its own. This goes perfectly with the roasted walnut, along with peppers, garlic and fresh arugula.

200g lentil noodles
1 red pepper
4 garlic cloves
3 Tbps Walnuts
fresh oregano & rosemary
3 tbsp olive oil
Salt & some chilli
- Cook the lentil noodles al dente according to package directions.
- Cut the peppers into thin strips, the garlic into fine slices and halve the walnuts.
- Heat a pan with olive oil and fry the peppers together with the garlic and walnuts. Finely chop the herbs and add them to the pan and season the vegetables with a little salt and chili.
- Add the pasta to the roasted vegetables and finally add the fresh arugula. Season the pasta with salt and chili.
